A global pandemic changed my perspective on most things.
I hope that identifying which of the things are truly important will be one of the longer lasting impacts of repeated national lockdowns and collective anxiety.
As a disclaimer, I am not a professional chef, and the thought of me becoming a life coach is about as unrealistic as it is inadvisable. However, if you’ll indulge my philosophical tendencies for a moment, I’d like to propose that those important things are, in fact, pillars.
These pillars are, quite literally, the supports that hold each and every one of us up. Family, friends, livelihoods, physical and mental health are some of the most recognisable ones.
There is no limit on how many pillars we might have. I am certain though, that each one is deeply personal, and if weakened or removed, can cause our foundations to buckle and sway, threatening to throw us off balance. I don’t think it’s overly dramatic to state that without the balance, it can be hard to feel like life is anything but a flickering shadow of what it could be.
Yes, don’t worry; this is a cookbook. You have not been scammed.
All of the most enjoyable meals you’ve ever had – the most delicious burger, the most memorable lasagne, the most decadent duck breast, the most indulgent chocolate brownie – will also have the balance at their core.
To ascend to the uplands, balance is imperative. Whether it’s the flavours, the textures or the techniques, there are multiple columns that can be utilised to ensure that even the humblest ingredients become far, far greater than the sum of their parts.
More important than any recipe are the techniques to be taken from them, to be adapted from some of my most reliable gastronomic pillars as foundations in your own creations.
If the cookbook allows you to shore up your own balance through a greater sense of satisfaction at the dinner table, or by simply providing something other than external events to focus on, then it will have more than served its purpose.
