The popularity of corn and the variety of potatoes in Peru and Ecuador are good news for all vegetarians. There are many other meat-free specialties: Tortillas, sweet potatoes, guacamole, amaranth and quinoa are available almost everywhere. Half of the soybean harvest worldwide comes from South America. Much of it is used as animal feed, but of course a lot also ends up on the plates. If you are a bit overwhelmed when looking at the menu, the waiters can just ask for an order “sin carne” (without meat). If you would like to eat vegan, please add “sin productos lácteos y huevos” (without dairy products and eggs). For salads and fruits, a rule of thumb should be followed for hygienic reasons: “boil it, peel it or forget it.” In good restaurants, the food can be eaten without hesitation.
